Greetings, cake lovers. We’re slowly getting settled into our new life back in British Columbia, but there hasn’t been much time for posting cakes with views, something I hope to rectify over the coming weeks and months.
For now I present my humble offering of my homemade rhubarb meringue pie, made with rhubarb from my parents’ garden. The recipe is from the new Great British Bakeoff: How to Bake, which I ordered for myself before we left Scotland.
The view is from my parents’ balcony, which overlooks their flower garden and Timothy Lake in the Cariboo Region of B.C.
Admittedly, my pie did not look like the pretty one in the book, and I wished I had added just a wee bit more sugar and used a bit less rhubarb, however the book has some brilliant tips on how to make the perfect meringue and I highly recommend it.
That’s an interesting idea, I always make crumble with rhubarb, maybe I should try a meringue next time!
