Sunshine (and cake) on Leith

“Would you mind if we borrowed your cake?”

I watched Katey’s face contort in discomfort, as her mind wrestled with the thought of her hours of creative labour being marched out of the building to locations unknown.

It was my first visit to the foodie sensation that is Edinburgh’s Tealicious, and while normally I wouldn’t be so bold as to ask someone to loan me her cake, running this blog is having a strange affect on me.

The Tealicious event was held in the beautiful area of Edinburgh knowns as Leith, and I knew just the view I wanted to capture with this cake.

After a sincere promise to return it unscathed, Miss Will Travel For Cake and I took it down to a nearby bridge and VERY CAREFULLY perched it next to the water to be photographed.

Here it is basking in the Leith sunshine, the Mint Chocolate Chip Layer Cake.

Katey, who can be found baking and blogging at Edinburgh Eats, was inspired by fellow blogger Sweetapolita’s recipe. The result was a cake that resembled Viennetta ice cream and tasted like the birthday cake you always dreamed of as a child. Layers of chocolate between layers of cream and thick buttery icing and even more chocolate.

P.S.: I took a piece of apple strudel out onto the terrace to photograph it in proper light (it was in the middle of winter) and when I came back in the waitress rushed over, all concerned about it. She’d thought I was ditching it or something. ;-) She laughed when I told her it was only for a photograph before I dug into that really very good strudel.

    • Tee hee! Great story. The first photo I ever took for this site, I took a piece of mousse cake up to popular spot in Edinburgh. I could see my husband was dying of embarrassment as people stared at me taking the photos, so I told him he could pretend he didn’t know me. “Is that alright?” was his reply. Ahh, good times.

  3. yum yum yum! mint chocolate chip is my all time favourite ice cream flavour so I bet I would love this! what a lovely treat for your last few weeks in Edinburgh. xx

  4. Hahaha I had no idea this happened before I got there – this is awesome! I’m fairly sure it’s Viennetta, not Velveeta ice cream cake though… but thanks for implanting the idea of a cheese-like loaf cake in my mind! Lol!

    I can’t wait to follow the Cake with a View journey! x

    • Oh Lee Ann I can’t even begin to tell you how good it was. I had some leftovers today and hours later I am still mourning that it is all gone.
